Make a homemade almond paste with these easy step-by-step instructions. This simple recipe can be used as a baking ingredient for cookie recipes, pastries, cakes, and croissants. With only five ingredients, you can make your own delicious almond paste at home.

If you are like me, you do a lot of baking, especially around the holidays. A key ingredient in many cookie recipes is an almond paste for an almond filling. I always had purchased canned almond paste found in the baking aisle. Well, somewhere along the way, almond paste got expensive. Like very expensive. So, I decided to make my own homemade version of a product I had been purchasing canned at the grocery store. This homemade almond paste recipe really is simple to make and will last a long time if properly wrapped and store in the fridge or freezer.

Homemade Almond Paste Recipe

There are two different ways to make an almond paste; either using fresh ground almonds (raw blanched almonds, blanched toasted almonds, or almonds with skin) or using almond flour. This almond paste recipe uses almond flour as it is not only easier, it is less expensive. A great recipe to make when you are going to be using almond paste.

I love almonds! Raw almonds, roasted almonds, almond butter, almond cookies, almond milk, and almond liquors… whatever manner almond is presented, I generally love. Clearly, the almond flavor is especially appealing to me. If you are an almond lover like I am, why not make your own almond paste? This will soon become one of your favorite recipes.

Tips and variations for making this almond paste recipe:

● Commercially produced almond paste contains around 45% almonds and 16 grams of sugar per 2 tablespoons.
● Almond paste and marzipan are not interchangeable. Almond paste has a coarser texture but is much softer than marzipan, which allows it to be spread as a filling. Almond paste also holds up in baking.
● There are almond paste recipes that use multiple egg whites and recipes that use no egg whites. This recipe uses one egg white.
● Add more almond extract if you like.
● For my UK and Australian friends: confectioners’ sugar is icing sugar (powdered sugar, 10x).
● This recipe is made with simple ingredients commonly found at your local grocery store.
● If freezing, tightly wrap up the almond paste roll with freezer wrap and store it in an airtight container.

● 1½ cups Blanched Almond Flour
● 1½ cups Confectioners’ Sugar
● ¼ teaspoon Salt
● 1 large Egg White
● ½ teaspoon Almond Extract
● 2 tablespoons Water (optional)

Homemade Almond Paste Directions

1. Add the almond flour, powdered sugar, and salt to the bowl of the food processor and pulse for 5 to 6 seconds to fully combine.

2. Add the egg white and almond extract and pulse until the mixture comes together and forms a soft ball. If there are still dry spots or the mixture looks crumbly and does not form a ball, add a tablespoon or two of water to bring it all together (one tablespoon at a time, pulsing after the first tablespoon so it does not become too wet).

3. Remove the almond paste from the food processor and lightly knead it for a few seconds and then form either a round disk or into a log shape.

4. Wrap the almond paste in plastic wrap and chill for at least 2 to 4 hours before using.

5. This makes 16 ounces of almond paste.

6. Store the almond paste, tightly wrapped, for up to 1 month in the fridge or up to 3 months in the freezer.
