For Cheesy Puffs
10 khari biscuit
10 tsp grated processed cheese
5 tsp hot and sweet chilli sauce

For The Topping
1 tbsp butter
1/4 cup finely chopped capsicum
1 tbsp plain flour (maida)
3/4 cup milk
1/4 cup boiled sweet corn kernels (makai ke dane)
1 tsp dry red chilli flakes (paprika)
salt to taste

Method


For the topping

  1. Heat the butter in a broad non-stick, add the capsicum and sauté on a medium flame for 30 seconds.
  2. Add the plain flour, mix well and cook on a medium flame for 30 seconds, while stirring continuously.
  3. Add the milk, mix well and cook on a medium flame for another 1 to 2 minutes, while stirring continuously.
  4. Add the corn, chilli flakes and salt, mix well and cook on a medium flame for 1 more minute.
  5. Cool slightly and keep aside.

How to proceed

  1. To make cheesy puffs, place the khari biscuits on a clean, dry surface, put a little topping over each khari biscuit.
  2. Finally sprinkle 1 tsp cheese over it and spread ½ tsp hot and sweet chilli sauce evenly over it.
  3. Bake in a pre-heated oven at 200°c (400°f) for 5 to 7 minutes or till the cheese melts.
  4. Serve the cheesy puffs immediately.
